Our Story

The food trucks decor is a living canvas, reflecting Ileana‘s rich past with over 15 years of customer service experience in restaurants and resorts across Mexican cities.Holy Taco and Maxi eats is more than just a food truck. It’s a vibrant, casual celebration of authentic Mexican cuisine specializing in the flavourful delight of birria, they hand-select the finest ingredients and sharing the creation of the most authentic Mexican tacos and cuisine.

The journey started on July 1, 2022, as Ileana envisioned sharing her culinary delights at a Canada Day event. Fueled by Bradley’s charisma and a shared commitment to crafting an authentic Mexican experience, they launched a traditional, vibrant Mexican food stand. Holy Taco proudly carries an authentic recipe, passed down through generations from Ileana’s grandmother, Eva Chavez.

Holy Taco is a culinary journey inspired by Ileana’s roots in the Mexican state of Jalisco. Ileana took up cooking at 10 years old. She showed her responsibility of cooking for her younger siblings while her parents were at work. At 14 years old, she lost both parents including her father, Alberto Lopez, a pianist and rockstar in the iconic 1970’s band ” Toncho Pilato’s” in Guadalajara, Jalisco, Mexico. The memory of her parents, symbolized by the esscense of “La Muerte”, serves as a guiding inspiration for her culinary craft. The encouragement from Bradley I helped her turn her dreams into reality, introducing the tradition of a local neighbourhood, sharing culture and culinary love on wheels.
